- 1 pound dried red kidney beans, rinsed and sorted
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 stalks celery, chopped
- 4 cloves garlic, minced
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 bay leaf
- 3 cups chicken broth
- 1 pound Andouille sausage, sliced
- 4 cups cooked white rice
Equipment
- Slow cooker
- Cutting board
- Knife
- Measuring cups and spoons
Method
- Add all ingredients except for the rice to your slow cooker.
- Stir to combine.
- Cover and cook on low for 8 hours.
- Remove the bay leaf and discard.
- Mash some of the beans against the side of the slow cooker to thicken the sauce.
- Serve over cooked white rice.
Notes
You can use either dried or canned red kidney beans for this recipe. However, if you use canned beans, reduce the cooking time to 4 hours on low. If you like your red beans and rice spicier, you can add a pinch of cayenne pepper or some hot sauce to the recipe.Nutrition Info
