  • 1/2 cup annatto oil

  • 1 eggplant, sliced
  • 1 bok choy, chopped
  • 1/2 cup string beans, cut into 2-inch pieces
  • Salt and pepper to taste

Method

  1. Boil the beef tripe and oxtail in a large pot with 2 cups of water. Simmer for 1 hour or until the meat is tender.
  2. Remove the meat from the pot and set aside.
  3. In a separate bowl, mix the peanut butter and ground rice with 1 cup of the broth from the pot. Set aside.
  4. In the same pot, sauté the onions and garlic in annatto oil until fragrant.
  5. Add the reserved meat and stir for a minute.
  6. Pour in the peanut butter mixture and stir well.
  7. Add the eggplant, bok choy, and string beans. Simmer for 5 minutes or until the vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Serve hot with rice and bagoong (shrimp paste) on the side.

Notes

This dish can be made in advance and reheated. The flavor will actually improve after sitting in the fridge for a day or two. You can also use other cuts of beef like brisket or chuck if you can't find tripe and oxtail.
