- 1kg ripe tomatoes, roughly chopped
- 6 red chillies, deseeded and roughly chopped
- 1 red onion, roughly chopped
- 6 garlic cloves, roughly chopped
- 2 cups white sugar
- 1 1/2 cups white wine vinegar
- 1 teaspoon salt

- A wooden spoon
- A blender or food processor
- Glass jars for storing
Method
- In a large saucepan, combine the tomatoes, chillies, onion, garlic, sugar, vinegar, and salt.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Reduce the heat to low and let the mixture simmer for 1 hour, stirring occasionally.
- After 1 hour, remove the saucepan from the heat and let it cool for 10 minutes.
- Pour the mixture into a blender or food processor and blend until smooth.
- Pour the mixture back into the saucepan and bring it to a boil over medium-high heat.
- Reduce the heat to low and let the mixture simmer for another 15 minutes, stirring occasionally.
- Remove the saucepan from the heat and let it cool for 10 minutes.
- Pour the mixture into glass jars and let it cool completely before storing in the fridge.
