Meanwhile, make the tomato sauce by heating a tablespoon of oil in a pan and adding one finely chopped onion and two crushed garlic cloves. Cook until softened. Add a can of chopped tomatoes and a tablespoon of tomato puree. Cook for 10 minutes. Layer the roasted vegetables with lasagne sheets and the tomato sauce. Top with grated cheese and bake for 30 minutes.
